How to Make Nigerian Style Jeloff Rice

Jollof rice is a spicy West African dish that is a traditional, but is also suitable for newcomers to Nigerian cuisine.

Ingredients
4 cups (740 grams) of white rice
2 tomatoes
1 large red pepper
3 tablespoons of tomato puree
2 cans of plum tomatoes
1 onion
Curry, thyme, bay leaf, red pepper, to taste
4 Maggi (or bouillon) cubes

Steps

Wash the rice you are cooking with.This is optional but a good idea.

Bring six cups of water to a rolling boil and add rice.

Let the rice cook for another 10-15 minutes, until fairly soft then drain rice

Blend together the tomatoes and the peppers until smooth.Sauté in pot in vegetable oil.

Slice the onions and fry in vegetable oil with the tomato/pepper mix.

Add spices (curry, thyme, bay leaf, Scotch Bonnets, Maggi or Knorr)

When tomato/pepper/onion mix is cooked, add rice to the mix, stir and cover, adding more water as needed, cook until rice is fluffy or moist, as you like.

Enjoy with stewed chicken or meat.
